Beef with Broccoli in Oyster Sauce

This is a great recipe containing beef. The recipe calls for beef, broccoli, mushrooms and water chestnuts with a delicious marinade and seasonings.

Ingredients -

1 Pound Broccoli -- fresh, bite size
3/4 Pound Flank Steak -- sliced thin
1/4 Cup Dried Cloud Ears -- soaked
1/2 Cup Water Chestnuts -- sliced or
Bamboo Shoots
1 Cup Onions -- sliced, optional
1 Tablespoon Ginger Root -- minced
1 Tablespoon Garlic -- minced
1 Tablespoon Rice Wine
3/4 Cup Beef Stock


-----MARINATE MEAT 20 MINUTES-----
1 Tablespoon Thin Soy
1 Tablespoon Rice Wine
1 Tablespoon Sugar
2 Teaspoon Cornstarch
2 Teaspoon Sesame Oil


-----SEASONINGS- ----
1 Tablespoon Cornstarch -- dissolved in
Cold water
1 Tablespoon Thin soy
3 Tablespoon Oyster Sauce
1 Tablespoon Sugar

1 Tablespoon Sesame Oil


 
Preparation:

1. Marinate the beef for 20 minutes.

2. Set the wok over high heat until it is hot.

3. Add 2 tablespoons of sesame oil.

4. Add the beef to the oil.

5. Stir fry the beef until it shows no pink.

6. Remove it and set aside.

7. Heat wok add 2 tablespoons of sesame oil.

8. Add the ginger, garlic and the all of the vegetables and stir fry for 1 minute.

9. Sprinkle in some with rice wine.

10. Pour in the beef stock.

11. Cover and cook for 4 minutes.

12. Add the beef and all the remaining seasoning.

13. Mix well until the mixture has thickened.

Mushroom Info

Cloud ears though not common are used frequently in Chinese cooking. Cloud ears are a type of jelly fungus and are related to the mushroom family.

The longer that you marinate your meat the more flavor it will have. If you have time try marinating your meat over night.
